two recipes for banana muffins. A fiber-rich, with the goodness of whole oats version, and a sweet, taste-treat sensation version. :D


WHOLE - WHEAT BANANA MUFFINS

1 c. oats
3 tbsp. sugar
1 c. whole wheat flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1 c. mashed bananas
1 egg
1/4 c. milk
2 tbsp. oil
Mix well and bake at 350 F degrees. Makes 12 muffins.

I stirred together all the dry ingredients and then stirred in the mashed bananas, whisked together the wet ingredients with a fork and then stirred them in, though I have been assured you don't need to do that and it will still work. Oh, and they took about 25 minutes to cook, but you might need to check them earlier depending on your oven.
These were better cold this morning than they were hot last night. (for a less healthy version, they are pretty good with cream cheese frosting)

BANANA AND CHOCOLATE MUFFINS
this was a recipe from England, so it's in oz, not cups.

8 oz. self-raising flour (or of normal flour with 2 tsp baking powder)
2 oz. brown sugar
3 oz. chocolate chunks
2 chopped bananas (this does work better with them not mashed)
either 6 oz butter, melted, or 4 fl oz. oil
2 eggs
3 Tbs milk
mix ingredients together and spoon into greased muffin tins. Sprinkle a mixture of brown sugar and cinnamon over the top and bake 20-25 minutes in a 200 C oven. best served warm, but pretty damn delicious cold.

I love bananas in stuff, but I can't stand them fresh, I like my fruit to be juicy. I've been making banana pancakes a lot lately. I'm so making this second recipe tomorrow. YUM.

The only baked goods icon I have is of pie. XD

Oooh. I happen to have bought too many bananas and they're all getting brown and I'm printing these and MAKING THEM TOO. I will let you know how I get on (I'm not much of a baker, that is fo' sho'.

Which were honestly better? The savoury or the sweet ones?

It's hard to say what ones are better, because they are so different :D One is good for like a healthy-ish breakfast, and the other is a delicious dessert. I'm more a dessert girl myself ;)

I'm the sort of person who would rather eat the dessert version for breakfast. Man, I just went to the supermarket and now I have EVERYTHING except brown sugar. CURSES. I'm wondering whether tomorrow it will be possible NOT to have mashed bananas - they're looking pretty... interesting.

(my only food related icon is tomatoes. I think I must remedy this!)

\o/ I bought fresh cinnamon. Well, not fresh, but a new container - the stuff I had was about 20 years or so old. heh heh. I think this stuff will have more taste.

The bananas ought to be verging on over-ripe, correct? I have the bananas, but they are yellow, not starting to brown.

the good thing about this recipe actually is that you can use less over-ripe bananas than with 'normal' banana bread. I wouldn't use ones that had any green, but yellow ones work.

and haha, yes. new cinnamon is better :D

The bananas have no green in them. I shall bake tonight, after my exam! Glorious, celebratory muffins! WHEE!!!

The old cinnamon was fine. For sprinkling over raisin toast - I'm not really a fan of and overly-cinnamon flavour. But I am sure cinnamon shall be a beautiful smell to fill the kitchen with! :D

... Definitely shall bake for 20 mins next time - just starting to burn at 25 mins. Mmm... Delicious though! :)

I have never heard of not liking oats. Though I have definitely heard of not liking porridge :) I love oats. I'm sure you could make it with two cups of flour instead :D

I added a few things to the whole-wheat banana recipe and then turned it into banana bread because I had like, 5 bananas that grew over-ripe. I'd never tried banana bread with oats before and it was good!
