who needs cheese?
For lunch today I made dairy-free calzones, two different kinds. And I took lots of pictures, because I was so pleased with having enough space to actually COOK.
I did one of them with spinach, leeks, and chicken. It was tasty, but needs more pepper and salt next time, and maybe a little garlic. I cooked down one heaped tablespoon of chopped frozen leek and a large handful of fresh baby spinach leaves with a good grating of nutmeg, and then chopped it coarsely, added a palm-full of leftover roast chicken and chopped that in with the veggies.
Then I patted out the dough, added pizza sauce and the topping.

Then fold, and onto the pizza stone which I decided I should get in honor of having an oven for the first time in ages!

The second one is peperoni and roasted pepper & artichoke heart tapenade. Then after about 25 minutes (on 425°F), out it came and om nom nom.


I was going to make something else nice for dinner, but I still have most of the peperoni calzone left, so I might have that with some carrots and humous. It will be good to see if these are good cold anyway, because if they are, I could make them as a thing to take for lunch once I start working. I don't like microwaved bread things, so heating such items up doesn't generally work unless there's a toaster oven.
I was going to do some more writing today. I am currently working on an MCR fic, a Teen Wolf fic, and a 1D fic. Like you do /o\ But instead I unpacked lots of boxes. Also went to the gym and cooked. I did not find my stamps though, so I really need to go find someplace to buy some so I can mail in my voter registration. Even in thirteen years of living in another country, I never missed an election. I am FOR. SURE. not missing this one just because of bad timing on my part.

But your cheesless calzone-a-ma-bobs look very nice! Did you make the dough or is it readymade? I am cuuuurious. When I did calzones in the waffle iron I used jiffy mix *g* but when I made meat pies I used canned biscuit dough. (And today I made focaccia from scratch! RANGE OF DOUGHS \o/)
Also: CONGRATS ON HAVING AN OVEN. OVENS ARE MY FAVORITE. OR POSSIBLY WAFFLE IRONS.

I did give away my waffle iron though. I hadn't used it in 3 years. Though I pretty often used my mom's when I was at her house. Because I LOVE waffles. Just. I didn't really love my waffle iron.

and I'm not totally sure there are great options here, though I love Obama as a man, I am sure there are people with political ideas that more echo my own.
