b) it's cool that this is happening - that people are being counted in the cencus if they consider themselves married - but is it going to show how many couples consider themselves married but can't do it legally? I couldn't see a bit on the form for denoting that? (I'm in the UK, this might be something everyone over there knows about and I'm just being dim...)
also, I'm waiting very patiently for my sister and her hubby to be ready to watch 5x15 so that might not have made a lot of sense (my mind ain't exactly 100% focussed right now...)

They have in the past. I worked with Census data for a project several (more than ten) years ago, and there was information about same-sex couples who live together. Of course the census can only count couples who live together, but still, it was interesting. There also was information on the number of same-sex couples living together who had children in the household.
And single adults with children, roommates, relatives living together, etc., etc. The Census has some awesome stats geeks working there -- they crunch the data every way they can! :D

Let the census processors try to quantify the kind of data they didn't expect, and cope with the freakin' truth.
