Summer time and the cooking is easy

Chinese Chicken Salad

Salad:
iceberg and/or romaine lettuce and/or shredded cabbage
Shredded carrots
Poached chicken, shredded or chopped

Garnishes:
Chopped cilantro
Chopped roasted peanuts
Chopped green onions

Dressing:
2 T peanut butter
¼ cup rice vinegar (I use a mix of seasoned and mild - could also use rice wine vinegar)
1 T toasted sesame oil
1 or 2 t honey
1 or 2 t soy sauce
1 t ginger paste (from produce section) or fresh grated ginger
1 t chinese mustard
Sri Racha hot sauce (the angry rooster kind) if desired
½ cup canola oil (drizzle in last while whisking to emulsify)

Directions:
toss the salad and chicken with the dressing (or shake it in a container with a lid) to coat it all well and then top with desired toppings.
Nom nom nom!

got this recipe from [livejournal.com profile] skyblue_reverie and it is SO delicious. It would probably also be good with pressed tofu.

If I had not just eaten lunch, I would be starving after reading that. NOM. Sounds delicious!

I am going out for lunch or I would totally be having it again today. I might yet have it for dinner. It is so delicious. :D :D

I am totally in love with your icon, btw

It is sooooo good. While we were making it I was just thinking, hmm, looks good, hungry now, but then I tasted it and was glad to be eating with chopsticks or I would have been shoveling it in it was so good!

God, I love Chinese flavours when they're made from scratch. NOM. So trying this. (You should totally post this to omnomnom!)

[identity profile] rivers-bend.livejournal.com 2009-05-18 04:34 pm (UTC)(link)
You should definitely try. It's super easy (if you have a wand whisk, it is a little arm tiring if you do it by hand) and OMG SO DELICIOUS.

ooo, that does sound nummy.

[identity profile] rivers-bend.livejournal.com 2009-05-18 06:20 pm (UTC)(link)

Oooohhh!! This sounds so yummy!! And a lot like a salad they have at a cafe not far from my house cuz I so don't have all these ingredients at home right now... *thinks about making a run over to the cafe*

[identity profile] rivers-bend.livejournal.com 2009-05-18 06:21 pm (UTC)(link)
I spent almost 40 bucks on ingredients yesterday! But a lot of it is stuff I would want for other things anyway, so I didn't mind.

I miss peanut butter #2

:(

But this sounds very nice - can I ask though, what is cilantro? (It's a great word!)

[identity profile] rivers-bend.livejournal.com 2009-05-18 09:46 pm (UTC)(link)
when you said last time that you missed peanut butter I didn't connect why. That's not a thing here. my friend who made the dish for me is pregnant. I completely forgot that it's a thing pregnant women are told to avoid there.

Cilantro is coriander. so great word, maybe, but not a great thing (blik)

[identity profile] myownghost.livejournal.com 2009-05-18 10:21 pm (UTC)(link)
hold the cilantro, but otherwise, yum!

[identity profile] rivers-bend.livejournal.com 2009-05-19 02:28 am (UTC)(link)
I am with you on holding the cilantro. YUCK. i also held the peanuts and green onions. but it'd perfectly delicious without any of them :D

[identity profile] tiffosis.livejournal.com 2009-05-18 10:41 pm (UTC)(link)

The DVR is set, and I am SO SO EXCITED. CAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAT

[identity profile] pixel-0.livejournal.com 2009-05-19 02:24 am (UTC)(link)
Ooh. This sounds delicious! And with tofu too? Mmm! Now I've got a bit of a craving for tofu...and it's almost 10:30 at night. Haha.

[identity profile] rivers-bend.livejournal.com 2009-05-19 02:31 am (UTC)(link)
I haven't tried it with tofu, but especially that grilled pressed kind that I can't remember the name of, I bet it would be good.

hahahaha indeed. Tofu at 10:30. I can't say I've ever had that craving :D

[identity profile] victorian-tweed.livejournal.com 2009-05-20 12:02 pm (UTC)(link)
I am so going to try this! Thank you, and skyblue_reverie for sharing!

I love pressed tofu, so will def. give this variation a go!

[identity profile] rivers-bend.livejournal.com 2009-05-20 03:24 pm (UTC)(link)
You are welcome! I hope you like it. I need to make it again. I think I'll pick up some lettuce on the way home from my appointment this morning.
