Summer time and the cooking is easy
Chinese Chicken Salad
Salad:
iceberg and/or romaine lettuce and/or shredded cabbage
Shredded carrots
Poached chicken, shredded or chopped
Garnishes:
Chopped cilantro
Chopped roasted peanuts
Chopped green onions
Dressing:
2 T peanut butter
¼ cup rice vinegar (I use a mix of seasoned and mild - could also use rice wine vinegar)
1 T toasted sesame oil
1 or 2 t honey
1 or 2 t soy sauce
1 t ginger paste (from produce section) or fresh grated ginger
1 t chinese mustard
Sri Racha hot sauce (the angry rooster kind) if desired
½ cup canola oil (drizzle in last while whisking to emulsify)
Directions:
toss the salad and chicken with the dressing (or shake it in a container with a lid) to coat it all well and then top with desired toppings.

skyblue_reverie and it is SO delicious. It would probably also be good with pressed tofu.

Cilantro is coriander. so great word, maybe, but not a great thing (blik)

hahahaha indeed. Tofu at 10:30. I can't say I've ever had that craving :D
