Chinese Chicken Salad

Salad:
iceberg and/or romaine lettuce and/or shredded cabbage
Shredded carrots
Poached chicken, shredded or chopped

Garnishes:
Chopped cilantro
Chopped roasted peanuts
Chopped green onions

Dressing:
2 T peanut butter
¼ cup rice vinegar (I use a mix of seasoned and mild - could also use rice wine vinegar)
1 T toasted sesame oil
1 or 2 t honey
1 or 2 t soy sauce
1 t ginger paste (from produce section) or fresh grated ginger
1 t chinese mustard
Sri Racha hot sauce (the angry rooster kind) if desired
½ cup canola oil (drizzle in last while whisking to emulsify)

Directions:
toss the salad and chicken with the dressing (or shake it in a container with a lid) to coat it all well and then top with desired toppings.
Nom nom nom!

got this recipe from [livejournal.com profile] skyblue_reverie and it is SO delicious. It would probably also be good with pressed tofu.

It is sooooo good. While we were making it I was just thinking, hmm, looks good, hungry now, but then I tasted it and was glad to be eating with chopsticks or I would have been shoveling it in it was so good!

You should definitely try. It's super easy (if you have a wand whisk, it is a little arm tiring if you do it by hand) and OMG SO DELICIOUS.

Oooohhh!! This sounds so yummy!! And a lot like a salad they have at a cafe not far from my house cuz I so don't have all these ingredients at home right now... *thinks about making a run over to the cafe*

I spent almost 40 bucks on ingredients yesterday! But a lot of it is stuff I would want for other things anyway, so I didn't mind.

when you said last time that you missed peanut butter I didn't connect why. That's not a thing here. my friend who made the dish for me is pregnant. I completely forgot that it's a thing pregnant women are told to avoid there.

Cilantro is coriander. so great word, maybe, but not a great thing (blik)

I haven't tried it with tofu, but especially that grilled pressed kind that I can't remember the name of, I bet it would be good.
