I really want to eat this now. Do you know what the advantage is of using two types of potatoes, though? Also, what is miso broth, exactly, and how it is obtained? I am guessing you can make it with miso paste and water, but I'm not sure of the ratio.

You can probably use whatever potatoes you want, but I didn't want to use all starchy ones (red) or all waxy ones (yellow) because ... actually ihni. It seemed like a good idea lol. I had a carton of miso broth in my fridge that I got in the section with all the chicken broth and beef broth etc. I didn't like it as much as I'd hoped plain, but thought it might be a good addition to my soup. I've never had miso paste so have no idea what to do with it, but I'm sure you could just add some to taste :D

I’ve used miso paste to make broth and it works fine.

I totally approve of the whipping cream substitution and need this in my mouth immediately!
