Italian soup

I failed completely to write today, but I did manage to do four loads of laundry, clean up the house, and make a pot of soup that turned out to be amazing. And really easy. I made it up, and am horrible at remembering what I did, so I'm putting it here for posterity.

I made it in the slow-cooker, but I am sure it would work just fine in a pot or in the oven.

one can of kidney beans
one can of cannelli beans
one large can chopped tomatoes
two cups beef broth
two teaspoons italian herbs

I threw all of the above into the cooker on low.
I prefer smooth soups to chunky, so I half pureed the beans and tomatoes, but if you like chunky, that's not necessary.
Then I skinned
four sweet Italian chicken sausages
and cooked the meat in a frying pan.
Just before it was cooked, I added
two cloves of crushed garlic
I drained the sausage and threw it in the pot.
After a couple hours I chopped
two large handfuls of fresh parsley
and threw those in too, turning the cooker up to high heat.
I cooked it for another two hours or so, but only because I had started it that long before dinner.

You are welcome! It was SO delicious. I made cornbread to go with it because I didn't have any other bread, but I think it would be super yummy with herb bread or cheese bread.

I've made a similar soup before without the sausage meat, and it is very good, too. With that, I usually add some pasta. The parsley is key, though.

I'm mentally inventorying what I've got on hand that would work, and that happens to include some premade meatballs. And some orzo. No parsley, but I do have spinach....

Oo, that sounds good. And it's the kind of soup that you can add just about any other veggie to if you wanted. Big chunks of zucchini and carrot and potato and celery. Oh man, I might have to see if the store is open tomorrow and get some ingredients. :-)

i'm sure you will do fine. It is super easy. the hardest part was not laughing like a twelve year old when I was holding the sausages, cutting them to get them out of their skins.

I read too much slash fic, clearly.
